This is a super easy weeknight dinner. While not the prettiest dinner, this dish is very healthy and tasty. I LOVE hummus. Not the gross Sabra stuff, but the fresh wonderful stuff Blue Moose of Boulder makes. You can use a plain hummus or a flavored one with this chicken. Garlic or roasted red pepper are my favorite hummuses to use in this dish. Serve with steamed vegetables, quinoa, or pasta.
Ingredients:
2 chicken breasts
3/4 cup hummus
1/2 lemon, juiced
1/2 teaspoon paprika
salt and pepper
Preparation:
1. Place chicken breasts in a greased 8x8 glass pyrex pan.
2. Spread hummus evenly over the top of chicken breasts in a thin layer.
3. Season chicken with paprika, salt, and pepper.
4. Drizzle with juice from half a lemon.
5. Bake at 450 degrees for 30-35 minutes.
