This is probably the easiest crock pot recipe there is. Four ingredients and only a few hours. Simple and delicious. I love to make crock pot lunches when I'm working from home. Quick-cooking Tapioca can be found in the baking aisle, near the Jello. This is not Tapioca pudding, as my sister mistakenly thought. It is, however, a key ingredient in Tapioca pudding. Her texts about the confusion were pretty funny. Serve with rice, quinoa, or, my favorite, mashed potatoes!
Ingredients:
2-3 large chicken breasts
1/2 cup maple syrup
1/3 cup stone ground Dijon mustard
2 tablespoon quick-cooking Tapioca
Preparation:
1. Trim fat from chicken and cut into 3-4 ounce portions.
2. In crock pot, mix syrup, mustard, and tapioca. Stir unti combined.
3. Place chicken in crock pot and coat in sauce.
4. Cook on low for 4-6 hours, turning chicken once.
