As a kid, I hated burgers but loved meatloaf. I ate my meatloaf with a concoction of ketchup and barbecue sauce. I was weird. Nowadays, I still make meatloaf the same way my mom does, but I moved away from the ketchup mixture. I just use Montgomery Inn BBQ sauce nowadays. This is a great dinner to make on a cold winter day.
Ingredients:
3/4 pound ground beef
1/4 cup onion, diced
salt and pepper
1 clove garlic, minced
1 cup Special K cereal, crumbled
1/3 cup milk
GF* - To make this gluten free, use a gluten free cereal as filler, such as Rice Chex.
Preparation:
1. Combine ground beef, onion, salt, pepper, and garlic powder together in a medium bowl.
2. Stir in milk. Gradually add crumbled Special K until meatloaf has a uniform consistency.
3. Arrange in loaf form in a greased glass 8x8 pan.
4. Bake at 425 degrees for 40-45 minutes, until set.
5. Let stand for a few minutes to cool down. Serve with ketchup or BBQ sauce and a side salad.
