These are so addicting. Just putting that out there. I've heard them called many things - Mexican Wedding Cookies, Butter Balls, Russian Teacake Cookies, etc. Mine are a little different, as I add vanilla and always use pecans. Whatever you choose to call them, they are amazing. You can use a different type of nut if you prefer.
Ingredients:
2 sticks butter, softened
1/2 cup powdered sugar + extra for rolling
1 3/4 cups flour
1/2 teaspoon vanilla
1/2 cup chopped pecans
Preparation:
1. Cream together butter, vanilla, and powdered sugar.
2. Gradually add flour until dough is uniform.
3. Stir in nuts.
4. Refrigerate dough for at least an hour to solidify.
5. Form dough into 1-inch balls. Bake at 350 degrees for 18-20 minutes.
6. Let cookies cool, then roll in powdered sugar while still slightly warm.
