Every time I make these cupcakes, people wow over them. The Oreo cookie on the bottom surprises people every time. There are two ways that I make these. One, with the cake batter from the Chocolate Stout Cupcakes when I have the time to make them from scratch. The other is when I am short on time and need to whip up some cupcakes, I just use a boxed chocolate cake mix.
Ingredients:
1 package Oreo Cookies, regular size
1 package chocolate cake mix or cake batter from my Chocolate Stout Cupcake recipe
Frosting:
8 ounces cream cheese, room temperature
1/2 cup butter (1 stick), room temperature
3 3/4 cups powdered sugar
1 teaspoon vanilla
cupcake liners
Preparation:
1. Preheat oven to 350 degrees.
2. Mix packaged cake mix according to directions or make Chocolate Stout Cupcake batter.
3. Line 24 cupcake tins with liner, place a regular size Oreo cookie in the bottom of each liner.
4. Take 1/2 of remaining cookies and chop coarsely and add to cake mix. Fill the cupcake tins.
5. Bake for 15 minutes (or according to box directions).
6. While cupcakes are baking make the frosting. Cream together butter and cream cheese. Add vanilla.
7. Add powdered sugar slowly until blended well.
8. Chop remaining regular-sized Oreos very fine (a food processor works well). Add to frosting.
9. After cupcakes have cooled, frost.
