This is a great recipe from a blog I follow, The Kitchn. Asparagus is my sister's favorite vegetable, and cheese is always a favorite in my family. It doesn't get much better than the ingredients in these crisps. They are fairly easy. The key is just to make sure the asparagus is as dry as possible.
Ingredients:
2 cups Sartori Parmesan, grated
8 asparagus spears, grated
1/4 teaspoon pepper
Preparation:
1. Preheat oven to 375 degrees. Line 2 large baking sheets with parchment paper.
2. Wash asparagus and dry completely. It is important for the water to be completely removed from the asparagus for these to get crispy.
3. Blend asparagus in a food processor, until finely chopped. Pat dry again to remove moisture.
4. Stir asparagus, cheese, and pepper together in bowl.
5. Use a half tablespoon to scoop onto baking sheets. Bake for 8-9 minutes, until edges brown.
6. Let cool on baking sheet for 5 minutes. Remove to paper towel to absorb any additional moisture.
7. Serve alone, with salad, soup, or risotto.
