BRAVO! Cucina Italiana has one of my favorite pasta dishes. There used to be a BRAVO! near my parent's house, but it closed a few years ago. I now go out of my way every now and then to go to one that is further away, just for this awesome pasta dish. This is one of the restaurant's most popular dishes, so unsurprisingly it is called Pasta Bravo. This is my version!
Ingredients:
1 red pepper
2 tablespoon olive oil, divided
1/4 cup cream
1 clove garlic
1/2 teaspoon oregano
1/2 teaspoon onion powder
1/2 teaspoon chili poweder
salt and pepper
1 chicken breast, cut into strips (cooked in skillet or grilled)
1/2 cup mushrooms
3/4 cup Sartori Montamore, shredded
Preparation:
1. To make sauce, preheat oven to 400 degrees. Rub pepper with 1 tablespoon olive oil and place on a foil lined cookie sheet. Bake pepper, turning occasionally for 40 minutes. Remove skin and seeds from cooked pepper.
2. In a food processor, blend roasted pepper, cream, garlic, oregano, onion powder, chili powder, salt and pepper.Blend until smooth consistency.
3. Move contents of food processor to a saucepan on the stove. Heat over medium-low. Add 1/2 cup shredded Montamore.
4. While making sauce, boil water and cook pasta, about 15 minutes.
5. While sauce and pasta are cooking, cook chicken. Grilled chicken adds a nice flavor to the dish. If cooking on the stove, heat 1 tablespoon olive oil and cook chicken strips.
6. Add mushrooms and sauté with chicken for 2-3 minutes, until tender.
7. Drain pasta and mix pasta, sauce, chicken and mushrooms together. Top with shredded Montamore.
