On our annual ski trip this year, my sister asked for some sliders for lunch one day. The Cranberry Cheddar Turkey Sliders I make with Thanksgiving leftovers are a family favorite, but mixed it up with new seasoning and using chicken instead of turkey. These are quick and easy for an appetizer or a group lunch!
Ingredients:
12-pack Hawaiian buns
1 chicken breast, cooked and shredded
7-ounce tub basil pesto, 2 tablespoons reserved for sauce
1 pack mozzarella slices
Sauce:
1/2 cup butter, melted
2 tablespoons pesto
1 teaspoon Worcestershire sauce
1/2 teaspoon sesame seeds
salt and pepper
dash of hot sauce
Preparation:
1. Preheat oven to 350 degrees. Line a baking sheet with a silicone baking sheet or foil.
2. Mix pesto and shredded chicken together. Make sure to reserve two tablespoons of pesto for the sauce.
3. Cut Hawaiian buns in half lengthwise, keeping the entire base and tops in single sheets.
4. Layer the pesto chicken over the base half of the Hawaiian buns. Layer the mozzarella slices on top of the pesto chicken. Place tops of buns back on top of the mozzarella layer.
5. Mix the sauce ingredients together and pour over the tops of the buns.
6. Bake sliders for 15-20 minutes, until cheese is melted. If topping starts to brown too quickly, lightly tent sliders with foil.
