I made this for a dessert at a dinner I hosted for some work friends. This is a light and creamy cheesecake that almost tastes like whipped pie. I saw several pumpkin cheesecake recipes on several blogs I follow this fall, but I ended up making the one I saw on The Girl Who Ate Everything. This is a great light fall dessert that only uses half a can of pumpkin, so I often bake something else pumpkin along with it to use up a whole can.
Ingredients:
2 (8 ounce) packages cream cheese, softened
1/2 cup granulated sugar
1/2 teaspoon vanilla
2 eggs
1 (9 inch) prepared graham cracker crust
3/4 cup pumpkin puree
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
Whipped cream, for garnish
Preparation:
1. In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time.
2. Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread the batter into the crust.
3. Bake at 325 degrees for 35 - 40 minutes, or until center is almost set. Don't worry if there are a couple of cracks; when you refrigerate it they will close up.
4. Allow to cool, then refrigerate for 3 hours or overnight. Garnish with whipped topping before serving.
