abWith spring finally here and grilling weather back in season, I've been making more fish. This fish is super simple and packs a ton of flavor. This fish is great with roasted vegetables and mashed or roasted potatoes.
Ingredients:
4 cod filets
salt and pepper
1/3 cup brown sugar
1/3 cup balsamic vinegar
1 teaspoon garlic, minced
1 teaspoon rosemary, chopped
Preparation:
1. Season cod filets with salt and pepper.
2. Stir together brown sugar, balsamic vinegar, garlic, and rosemary in a small bowl.
3. Brush cod with balsamic glaze.
4. Create a foil packet for each filet and drizzle with additional glaze. Seal packets shut.
5. Heat grill to medium-high heat. Grill fish pods, flipping once, for about 5 minutes per side.
