For 4th of July weekend, it was all about grilling at my house. We grilled steaks, Lemon Rosemary Chicken, all sorts of vegetables, Grilled Peaches with Candied Pecans and Vanilla Ice cream, Turkey Burgers with Brie, Apples, and Jam, and these tasty skewers. These are super easy and have a lot of flavor. We made basic rice to go with them, which offset the spicy sausage and sauce.
Ingredients:
3/4 cup olive oil
4 large garlic cloves, pressed
2 tablespoons chopped fresh thyme
5 teaspoons smoked paprika
4 teaspoons red wine vinegar
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried crushed red pepper
1 pound (12-14) extra-large shrimp peeled, deveined
12 1-inch-long pieces andouille
12 cherry tomatoes
1/4 red onion, cut into large pieces
1 red pepper, cubed
1 zucchini, sliced
Preparation:
1. Whisk together oil, garlic, thyme, smoked paprika, red wine vinegar, salt, black pepper, and crushed red pepper in medium bowl to blend for glaze.
2. Soak wood skewers in warm for at least 10 minutes. Thread skewers with sausage, shrimp and vegetables.
3. Glaze skewers on both sides with glaze. Grill for about 8 minutes. Arrange skewers on platter.
