I really like Chinese food, so this at-home version of sweet and sour chicken is an easy way to get the same taste! This comes together really easily and reheats well the next day. This is one of my go-tos for groups.
Ingredients:
2 chicken breasts, cubed
1 tablespoon olive oil
1/4 cup all-purpose flour
1 teaspoon pepper
dash of salt
1 teaspoon garlic powder
1/2 teaspoon basil
1/2 teaspoon oregano
1 red pepper, cubed
1/4 onion, cubed
1 cup pineapple, cubed
1/2 to 3/4 cup sweet and sour sauce
Preparation:
1. Mix flour and spices together in small bowl.
2. Place cubed chicken in a plastic bag. Add flour mixture and shake well until chicken is well coated.
3. Heat oil in medium skillet.
4. Cook chicken in skillet until browned. Add onion and red pepper. Cook until they start to soften, 3-4 minutes.
5. Stir in sweet and sour sauce. Remove from heat. Stir in pineapple. Serve with rice.
