I've been trying to cut out as much added sugar to my diet as possible. I was having trouble with that afternoon snack and wanting to eat something filling enough to hold me over for a 3 hours until dinner but also satisfy my sweet tooth. These potatoes are super healthy, taste great, and heat up really well. I often make a double batch on the weekends and have this as a snack throughout the week.
Ingredients:
1 large sweet potato
2 medium apples, peeled, cored, and diced
1/2 cup water
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Preparation:
1. Preheat oven to 400 degrees. Use a sharp knife to poke a few holes in the sweet potato.
2. Place sweet potato on a baking sheet and bake for an hour. Remove and let cool.
3. Once cooled, peel sweet potato.
4. Place diced apples and water in a small pot. Bring to boil and stir occasionally, until apples are soft.
5. Drain excess liquid and mash apples with a potato masher. Add peeled sweet potato and mash together.
6. Stir in cinnamon and nutmeg. Serve warm.
