This avocado corn salsa is great as a dip for tortilla chips and as a side dish to salmon! It's a light and refreshing side dish that also packs a ton of flavor with a bit of heat.
Ingredients:
2 ears corn, shucked
1 red pepper, seeded and diced
1 avocado, pitted and diced
1 serrano, seeded and diced
1/3 red onion, diced
1 lime, zested and juiced
salt and pepper
Preparation:
1. Heat grill to medium. Grill corn for about 10 minutes, turning occasionally. Corn should be slightly charred. Remove from grill and cut corn off the cob.
2. In a medium bowl, mix the corn, red pepper, avocado, serrano, and red onion with the lime juice and zest. Season with salt and pepper and serve!
