This is a great summer salad to make for lunch or as a side with something grilled in the winter. The watermelon is fine cold or is wonderful if grilled in large chunks. I make this salad as a dinner in the summers.
Serves 2
Ingredients:
2 slices watermelon
1/2 cup feta, crumbled
1 tablespoon balsamic vinegar
3 cups lettuce (romaine, arugula, or spinach work well)
Preparation:
1. Arrange lettuce on a plate or in a bowl.
2. Top with feta and drizzle with balsamic vinegar.
3. Heat grill to medium-high heat and grill watermelon until warmed through, about 3 minutes per side.
4. Top salad with grilled watermelon and serve.
