I made this on a whim when I needed a dessert last minute. It ended up being really delicious, and a great dessert! This cake is great with out without the frosting.
Ingredients:
1/2 cup butter
1 1/2 cups sugar
2 large eggs, beaten
2 cups flour, sifted
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup milk
1/2 teaspoon vanilla
3/4 teaspoon baking soda
3 pureed bananas, very ripe
Frosting:
1/4 cup butter, softened
8 ounces cream cheese, softened
3 cups powdered sugar
2 1/2 teaspoons vanilla extract
Preparation:
1. Preheat oven to 350 degrees. Grease a 9 x 13 baking pan.
2. Cream butter, sugar, and eggs together.
3. Combine flour, salt, and baking powder together.
4. Puree bananas and baking soda in a food processor or blender.
5. Add 1/2 of flour mixture to butter mixture. Mix well.
6. Add milk to batter. Stir until well combined.
7. Add the rest of the flour to batter. Combine.
8. Add vanilla and banana puree to batter.
9. Bake 9x 13 pan for 35-40 minutes. Two 9-inchs pan work as well for a layer cake. Bake 25-30 minutes.

1. Cream cream cheese and butter together until very smooth.
2. Add sugar and vanilla. Blend well.
3. Spread on cooled cake.
