This pizza is a great way to use leftover shredded chicken. I usually have shredded chicken leftover when I make enchiladas, so this pizza is great to make in the same week. You can turn it into a Hawaiian BBQ Chicken Pizza by adding diced pineapple!
Ingredients:
1 pound loaf pizza dough
1 teaspoon cornmeal
1 1/2 tablespoons olive oil
1/4 cup BBQ sauce
1/2 cup sliced red onion
1/3 cup shredded chicken (you can also use cooked diced chicken)
6 ounces pizza cheese (a mix of mozzarella, fontina, and Parmesan is what I use!)
1 tablespoon cilantro
Preparation:
1. Preheat oven to 500 degrees. Heat pizza stone in oven.
2. Roll dough as thinly as possible. Adding a little flour to coat the dough helps.
3. Take the hot stone out of the oven. Sprinkle the cornmeal over the stone. This prevents the dough from sticking to the stone.
4. Move dough to pizza stone. Brush olive oil over dough.
5. Spread BBQ sauce evenly over dough. Add pizza cheese.
6. Sprinkle red onion and chicken over pizza.
7. Bake for 18-20 minutes at 500 degrees.
8. Sprinkle cilantro over pizza for the last minute in the oven.
9. Remove stone from oven. Allow to cool for a few minutes prior to cutting.
