These are great for breakfast. They go really well with coffee and are healthy too! When I made these and brought them into work, most people's comment were "blueberry orange muffins, really?" They were a hit!
Ingredients:
2 cups whole wheat flour
3/4 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
2 ½ teaspoons orange zest (zest of one orange)
1 cup orange juice (add more if batter seems dry)
1/4 cup canola oil
1 large egg, lightly beaten
1 cup fresh blueberries
1/3 cup chopped pecans or walnuts (optional)
Preparation:
1. Preheat oven to 400 degrees.
2. Combine flour, baking powder, salt, and baking soda in a large bowl.
3. Combine orange rind, juice, oil, sugar, and egg in a small bowl, stirring with a whisk.
4. Add to flour mixture, stirring just until moist.
5. Fold in blueberries and nuts.
6. Spoon batter into 12 muffin cups coated with cooking spray.
7. Sprinkle with 1 tablespoon brown sugar (optional)
8. Bake at 400 degrees for 15-20 minutes or until the muffins spring back when touched lightly in center.
9. Carefully remove each muffin; place on a wire rack.
