What do I love more than Buffalo Chicken Dip? Not much, but egg rolls are up there on my list. So why not put buffalo chicken IN an egg roll? When we decided to ask Tony's good friend Gunthar to officiate our wedding, we invited him over to make a lot of his favorite foods to butter him up. Gunthar loves a good buffalo chicken dip as much as I do, so of course made these as part of the menu along with Vesper martinis, Cheesy Gordita Crunch Tacos, and Refried Bean Casserole.
Ingredients:
Buffalo Chicken Dip
16 large egg roll wrappers
canola oil
1/4 cup water
Spicy Ranch
Preparation:
1. Make buffalo chicken dip and let cool most of the way. It is a lot easier to handle and roll the egg rolls when it isn't piping hot!
2. To prepare egg rolls, add 1/4 cup of dip to a corner of the wrapper. Take the closest of corner of wrapper and tightly fold over the dip. Fold in the left and right sides of the wrapper, sealing the edges tightly against the filling. Roll wrapper tightly. Dip your finger in water and use it to seal the wrapper. I find it helpful to watch a quick YouTube video to refresh my memory before I start rolling them. Prepare all egg rolls before frying.
3. Add 2 inches oil to a pot or dutch oven. Heat oil to about 375 degrees.
4. Fry egg rolls, 3 at a time, turning once until a deep golden brown. Cool on a cooling rack. Serve with spicy ranch!
