My sister brought this recipe to my attention. She interned at a cardiac monitoring equipment company over the summer and her coworker Emily made these scones. She liked the recipe so much that she asked for it and made them gluten free!
Ingredients:
2 cups flour
1/3 cup sugar
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
6 tablespoons unsalted butter, cold
1/2 cup buttermilk
1 egg
1/2 teaspoon cream of tartar
1 1/2 teaspoon vanilla
Notes:
- GF* - To make these gluten free, substitute gluten free flour.
- To make butter milk at home, put 1/2 tablespoon vinegar in a measuring cup and fill with milk to the 1/2 cup line. Mix well and let stand for 5 minutes, until thickened.
Preparation:
1. Preheat oven to 400 degrees.
2. Combine the flour, sugar, salt, baking powder and baking soda in a large bowl.
3. Cut butter into 1/2 inch cubes and distribute over flour mixture. Using a food processor, cut the butter into the mixture until it resembles coarse crumbs. (Add butter and mix with your fingertips to a coarse meal.)
4. In a small bowl, stir together buttermilk, egg, cream of tartar and vanilla.
5. Add buttermilk mixture to the flour mixture and stir to combine.
6. Drop large scoops onto an baking stone. Bake for 9 to 15 minutes, or until lightly browned. Cool or serve warm, with butter and jam.
