This is one of those meals where I just want to keep eating and not stop. I make this with either lamb chops or lollies. The lamb lollies from Costco are fantastic and amazingly tender. The marinade was originally for chicken, which would work as well, but lamb lollies are delicious! When I finally got my hands on some lamb, this was my go-to recipe! These are so good, I don't know if I'll be able to make them any other way. These are great with mashed potatoes and some sautéed vegetables.
Ingredients:
8 lamb chops or 2 racks of lamb (8-10 lollies per rack)
1 tablespoon ground allspice
1 tablespoon thyme
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
1/2 teaspoon sage
3/4 teaspoon nutmeg
3/4 teaspoon cinnamon
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon sugar
1/4 cup olive oil
1/4 cup soy sauce
3/4 cup white vinegar
1/2 cup orange juice
1/4 cup lime juice
1 Scotch bonnet pepper, seeded and diced (a hot pepper. a jalapeño would also work)
1 cup onion, finely chopped
3 scallions, finely chopped
Preparation:
1. Mix all spices, olive oil, soy sauce, orange and lime juices, pepper, onion, and scallions to make marinade.
2. Marinate lamb for at least an hour, but overnight if possible.
3. Heat grill to medium heat. Grill lollies, flipping once, to desired degree on doneness, about 3 minute per side for medium for a lollie, or about 6-8 minutes a side for medium for a chop.
