This is a pretty easy crock pot recipe that I like to make in the winter. It's nice for a busy weeknight, as not much prep is necessary. Thank you to the Girl Who Ate Everything for this lovely dinner!
Ingredients:
2 chicken breasts, cut into 4 equal size pieces
1/4 cup all-purpose flour
1/2 tsp pepper
1/2 cup cashews
Sauce:
1/2 cup soy sauce
4 tablespoons rice wine vinegar
4 tablespoons ketchup
2 tablespoons brown sugar
2 garlic cloves, minced
1 inch piece of fresh ginger, grated
1/2 teaspoon red pepper flakes
GF* - Be sure to use a gluten free variety of soy sauce. The chicken can be breaded using rice flour instead of all-purpose flour.
Preparation:
1. Combine flour and pepper and spread on plate. Bread chicken in flour mixture.
2. Place chicken in crock pot.
3. Combine sauce ingredients in small bowl, then pour over chicken.
4. Cook on low for 5 hours.
5. Add cashews for last 10 minutes.
I serve this with rice and steamed broccoli.
