A coworker was cleaning out her kitchen and gave me dozens of cooking magazines. This recipe was in one of the Kraft magazines from a few years ago. These are my favorite types of weeknight dinners - minimal active prep time and on the table quickly. The chicken is great as a main dish with Cranberry-Almond Quinoa or sliced up on a salad.
Ingredients:
2-3 chicken breasts
8-ounce can cranberry sauce
1/2 bottle Catalina salad dressing
1 envelope onion soup mix
Preparation:
1. Preheat oven to 375 degrees.
2. Mix cranberry sauce, Catalina, and soup mix together in a bowl.
3. Place chicken in a glass 8x8 pan. Pour sauce over chicken.
4. Bake chicken for 30-35 minutes, until cooked through. Serve warm.
