This is my take on a dish at a local restaurant that has been a family favorite for years. Our server probably thinks it's a little strange when my mom, sister and I all order the same thing. The restaurant used to serve a seasoned soft breadstick with this pasta that was delicious. I can't quite recreate that breadstick at home. It's probably been 10 years since I've had one, and I still miss them. At least we can still make the pasta at home!
Ingredients:
Pasta for 3 people
8 oz heavy cream
1/2 cup grated Sartori Parmesan
1/2 cup grated Sartori Montamore
Spices: salt, pepper, garlic, oregano, basil, chili powder
1 red pepper, cubed
1 cup andouille sausage, sliced in 1/4 inch pieces (2 sausages)
1 cup chicken, cubed
1 tablespoon olive oil
GF* - To make this gluten free, substitute gluten free pasta and do not use any flour to thicken the sauce.
Preparation:
1. Boil water and start pasta.
2. Heat cream over medium heat in saucepan. Add spices. Stir every few minutes.
3. Heat oil in medium skillet over medium heat. Add chicken and cook 3-4 minutes.
4. Add sausage to skillet and mix in with chicken. Cook 2-3 minutes.
5. Add red pepper to skillet. Stir.
6. Add cheese to sauce and stir until cheese melts.
7. If sauce is not desired thickness, add flour, a teaspoon at a time.
8. Drain pasta, mix in chicken, sausage, red pepper and sauce.
