I've gotten kind of tired of the standard Banana Chocolate Chip Muffins and Chocolate Chip Banana Bread that I usually make with old bananas. I started wondering how I could mix it up and decided to make the muffins nice and chocolately. I found the original inspiration for these muffins at one of my favorite food blogs, Chef-In-Training. I'd say they turned out pretty nicely!
Makes 12-14 large muffins
Ingredients:
2 medium overripe bananas
1 large egg
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 cup granulated sugar
1 1/2 cups all-purpose flour
1/4 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup chocolate chips
Granulated Sugar for dusting tops of muffins
Preparation:
1. Mash bananas in medium size mixing bowl.
2. Add egg, oil, and vanilla.
3. Add sugar, stirring well.
4. Mix in flour, 1/2 cup at a time.
5. Add cocoa powder, baking soda and baking powder. Stir well.
6. Mix in chocolate chips.
7. Pour batter into lined or greased muffin tins.
8. Sprinkle a pinch of granulated sugar on top of each muffin.
9. Bake at 350 degrees for 25 minutes.
