I got a bundt cake pan for Christmas, so I of course had to make something to use that pan. Monkey bread is something I've been really wanting to make, but I didn't have the right sort of bread, so I went with a chocolate pudding cake instead. This is a great thing to make when you need a dessert to come together quickly and don't have the time to make a cake from scratch. Adding the coffee helps to bring out the chocolate flavor. I used leftover coffee from my morning pot. If you aren't a coffee drinker, no need to go out of your way to add it - just use additional milk instead.
Ingredients:
1 box chocolate cake mix (GF*- use GF cake mix)
1 box (3.4 oz) instant chocolate pudding mix
3 tablespoons cocoa powder
2 eggs
1 1/2 cups milk
1/4 cup coffee, at room temperature
1 teaspoon vanilla
1 1/2 cups semi-sweet chocolate chips
1/8 cup powdered sugar (for dusting)
Preparation:
1. Preheat oven to 350 degrees.
2. Use a mixer to combine the cake mix, pudding mix, cocoa powder, eggs, milk, coffee, and vanilla.
3. Stir in chocolate chips.
4. Grease a bundt cake pan. Pour in batter, using a spatula to smooth out the top.
5. Bake in preheated oven for 50-55 minutes, until a toothpick comes out clean.
6. Let cake cool in pan for 15 minutes, then remove to a cooling rack or plate to cool.
7. When cool, dust with powdered sugar. Slice and enjoy!
