After apple picking in the fall I have so many apples that I make apple cinnamon everything. Pancakes are no exception! This uses my standard pancake recipe and mixes in apples. The cinnamon apple topping is the best part here!
Ingredients:
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
2 tablespoons vegetable oil
1 large egg
1 teaspoon vanilla
1/2 teaspoon cinnamon
3 apples, peeled and diced
1 tablespoon butter
1 tablespoon brown sugar
1/2 teaspoon cinnamon
1/4 cup maple syrup
Preparation:
1. Sift together flour, sugar, baking powder and salt.
2. In a medium bowl, whisk together milk, oil, egg, vanilla, and cinnamon. Gradually whisk in dry ingredients.
3. In a medium skillet, melt butter. Add diced apples. Cook until they start to soften, about 3 minutes.
4. Mix in 1/2 cup of softened apples to the pancake batter.
5. In the skillet with the apples, add brown sugar and cinnamon, stirring to combine. Cook for 1-2 minutes, until sugar caramelizes. Add maple syrup and stir.
6. Heat a separate large skillet or griddle to medium. Spoon about 3-4 tablespoons of batter to make a pancake. Make sure to get apple chunks in each pancake!
7. Flip when pancakes start to have firm edges and have some bubbles that are starting to burst. Cook for 1-2 more minutes after flipping.
8. Keep warm on a plate covered with foil while cooking the rest of the pancakes.
9. Top pancakes with apple cinnamon syrup sauce!
