I visited the Eagle River Cranberry Fest in northern Wisconsin over a long weekend in October. I loaded up on cranberries and looked for anything and everything pumpkin to make. I LOVE pumpkin so what better fall treat than pumpkin cranberry bread??
Makes 1 loaf.
Ingredients:
1 1/2 cups all-purpose flour
2 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups granulated sugar
7.5 ounces (half of a 15 ounce can) pumpkin
2 eggs
1/2 cup vegetable oil
1/4 cup orange juice
1/2 cup cranberries (fresh or thawed frozen)
Preparation:
1. Mix sugar, pumpkin, eggs, oil, and orange juice in medium bowl.
2. Stir in flour, pumpkin pie spice, baking soda, and salt.
3. Add cranberries and gently mix.
4. Pour batter in well greased loaf pan.
5. Bake at 350 degrees for 60 minutes.
