As I started to prepare my list of Christmas cookies to bake for my 12 Days of Christmas cookie collections, I wanted to try out a few new recipes to see if they made the cut. These cookies from the Life, Love, and Sugar blog were a new spin on a sugar cookie. I really liked the concept, and Creme Brulee is a family favorite dessert. While these will be a big hit with any Creme Brulee lover you may know, they are just an average cookie. They don't make my top 12 cookies that I bake and give as gifts for the holidays.
Ingredients:
Cookie:
3/4 cup (1.5 sticks) butter, at room temperature
1/2 cup brown sugar
1/2 cup sugar
1 egg, at room temperature
1 tablespoon vanilla extract
1 vanilla bean, seeded
2 cups flour
2 teaspoon cornstarch
1 teaspoon baking soda
1/4 teaspoon salt
Frosting:
8 ounces cream cheese, at room temperature
1 1/4 cup powdered sugar
1 teaspoon vanilla
1/3 cup sugar
Preparation:
1. Preheat oven to 350 degrees and line 2 cookie sheets with baking mats or parchment paper.
2. Beat butter, brown sugar, and sugar with mixer until well combined.
3. Add vanilla, egg, and vanilla bean seeds. Mix until uniform in consistency.
4. Sift flour, cornstarch, baking soda, and salt together. Gradually add dry ingredients to batter.
5. Roll dough into tablespoon size balls. Place on baking sheet and bake for 7-9 minutes, until cookies start to brown around the outside. Do not overbake, as cookies will be back under the broiler for another minute or two after frosted.
6. As cookies cool, make frosting. Beat cream cheese with powdered sugar and vanilla until uniform.
7. Frost cookies.
8. Place sugar on a flat plate. Dip frosted part of each cookie in the sugar.
9. Place sugared cookies on a baking sheet and preheat the broiler to high.
10. Caramelize sugar on cookies for 2 minutes under the broiler. Watch closely so the cookies do not burn. Remove from oven and let cool. Store in an airtight container.
