Cutout sugar cookies are a tradition in my family. We always used to use the premade dough, but we had to switch to a homemade variety that we could make gluten free for my sister this year. Every year I make an assortment of Christmas cookies that I give to friends as holiday gifts. Last year, I did not make sugar cookies and I got complaints! So sugar cookies will be a cookie assortment cornerstone going forward.
Ingredients:
3/4 cup unsalted butter, slightly softened to room temperature
3/4 cup sugar
1 egg, at room temperature
2 teaspoons vanilla
1/4 teaspoon almond extract (optional)
2 1/4 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
GF* - To make these gluten free, use gluten free all-purpose flour.
Preparation:
1. Cream butter and sugar together until fluffy.
2. Add egg and vanilla, then almond extract. Beat until well mixed.
3. Sift baking powder, salt and flour together. Gradually add flour mixture until dough is a consistent texture.
4. Separate dough into 2 balls, wrap in plastic wrap, and chill dough for 1 1/2 to 2 hours.
5. Roll chilled dough into 1/8 thick disk. Use cookie cutters to cut out shapes.
6. Bake cookies at 375 degrees for 7 minutes.
