I found these in an old cookbook of my moms. I made them and took them into work to share with my coworkers. They were a hit!
Ingredients:
1 cup (2 sticks) unsalted butter, softened
2 cups brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups oats
2 1/4 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon salt
1 cup chopped hazelnuts or almonds
1 cup pitted dates
3/4 cup chopped dried figs
3 tablespoons granulated sugar
2 tablespoons lemon zest
2 tablespoons brandy
Preparation:
1. Cream butter and brown sugar together in a large bowl. Add eggs, one at a time, beating well. Mix in vanilla.
2. Stir in the oats, flour, baking powder, cinnamon, salt and nuts with a spoon.
3. In a medium size saucepan, cover dates and figs with water by an inch. Simmer until tender, about 20 minutes. Drain.
4. In a food processor, blend dates, figs, granulated sugar, lemon zest, and brandy until smooth.
5. In a 13x9 greased baking dish, pat 1/2 the oat mixture down. Cover with date puree. Top with remaining half of oat mixture.
6. Bake at 350 degrees for 25-30 minutes. Cool completely and cut.
