This is a quick and easy breakfast. When we go skiing out west, all the boys love one of these every morning. Meat can very easily be added to this sandwich. I usually add bacon, Canadian bacon, or leftover steak. I love my eggs with hot sauce, and usually top it with either Frank's or Siracha.
Ingredients:
2 pieces of bread, toasted
2 eggs
1 1/2 tablespoons milk
1/4 cup shredded cheese (Sartori Montamore and Parmesan are what I usually use)
1 1/2 tablespoons whipped cream cheese
salt and pepper
Italian spice blend (garlic powder, onion powder, oregano, basil)
hot sauce
Preparation:
1. Whisk together eggs, milk, and spices in a small bowl. Pour into small skillet heated over medium.
2. Scramble eggs.
3. Toast bread while eggs are cooking.
4. Arrange eggs in a square the size of the bread. Sprinkle cheese over scrambled eggs in skillet. Let melt.
5. Spread whipped cream cheese on 1 piece of toast.
6. Place eggs on other piece of toast. Make a sandwich! Serve with hot sauce.
