My friend Meghan and I get a weekly Imperfect Produce box. We got dates in our box last week, so we both immediately thought of stuffing them with cheese. I also made Oatmeal Pecan Muffins that have dates in them. I made these dates on a night that we'd ordered Chinese food and were in the process of waiting an hour for it. I was too hungry to wait an hour and had everything to make these.
Ingredients:
8 dates, pitted
8 teaspoons soft goat cheese
8 strips of prosciutto
16 basil leaves
Preparation:
1. Preheat broiler to high. Soak 8 toothpicks in water for 10-15 minutes.
2. Pit dates. Cut a slit lengthwise in each date to remove the pit.
3. Stuff a teaspoon of goat cheese in each date and pinch date closed.
4. Lay strip of prosciutto flat. Lay 2 basil leaves at top of strip. Place date on one basil leaf, then roll into a log and secure with a toothpick.
5. Place a baking sheet. Bake for 2-3 minutes, until goat cheese is very soft. Serve warm.
