I love this pasta salad and make it all the time! This is a great dish to bring to summer picnics and cookouts. I also like to make it for lunches at work.
GF* - To make gluten free, use gluten free pasta.
Ingredients:
1 box tri-color rotini
1 red pepper, diced
1 yellow pepper, diced
3/4 cup shredded carrots
1 wedge Sartori Rosemary and Olive Oil Asiago or Mediterranean Fontina, diced
3/4 cup diced pepperoni
2/3 cup diced summer sausage
3/4 cup Italian salad dressing (or, to taste)
Preparation
1. Boil water in a pot over medium heat. Prepare pasta according to pasta directions.
2. While pasta is cooking, cut up vegetables, meat and cheese and place in a large bowl.
3. When pasta is done cooking, drain and rinse with cold water.
4. Add pasta to large bowl with other ingredients. Mix together. Add in Italian dressing and stir well.
5. Refrigerate until ready to use. Stir before serving. Pasta salad might need a little extra Italian dressing at time of serving.
