While I was in Hawaii for spring break, I ate a lot of pineapple. Maui pineapple is sweeter than pineapple you buy on the mainland. Pineapple you buy on the mainland gives most people that fuzzy tongue feeling after eating quite a bit of it, which is a mild allergic reaction. I didn't have that happen with the multiple pineapples I ate in Hawaii. I am now on this obsessive pineapple kick, making all sorts of pineapple dishes. This chicken mixes a spicy jerk rub with a sweet pineapple relish for a healthy weeknight dinner. I made Cilantro-Lime Quinoa to go with this.
Ingredients:
4 chicken breasts
1 cup pineapple, diced
1/2 red pepper, diced
1/3 cup red onion, diced
1/8 cup cilantro
1 teaspoon lime juice
Jerk Seasoning:
1 tablespoon garlic powder
3 teaspoons cayenne pepper
2 teaspoons onion powder
2 teaspoons dried thyme
2 teaspoons dried parsley
2 teaspoons sugar
2 teaspoons salt
1 teaspoon paprika
1 teaspoon ground allspice
1/2 teaspoon black pepper
1/2 teaspoon dried crushed red pepper
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
Preparation:
1. Mix together seasoning to make jerk seasoning rub for chicken. Rub chicken with seasoning.
2. Heat grill to medium heat. Grill chicken for 16-20 minutes, until cooked through.
3. While chicken is cooking, make pineapple relish. Toss pineapple, red pepper, red onion, cilantro, and lime juice together.
4. Serve chicken warm with pineapple relish.
