I spent a summer abroad when I was in high school. The lovely family I stayed with in France for several weeks made this salad dressing, and I've continued to make it over the years. This is my go-to dressing for most salads, but it goes very well with the bitterness of kale. This is a great side salad. For summer work lunches, I'll add chicken or steak to it.
Ingredients:
1/2 bunch of kale, washed and torn into bite size pieces
1 apple, cored and diced
1/4 cup Sartori Parmesan cheese, shredded
Dressing:
1/4 - 1/3 cup olive oil (adjust based on how strong of dressing you like)
1 lemon, juiced
1/2 tablespoon balsamic vinegar
1 1/2 tablespoons Dijon mustard
1 clove garlic, minced
salt and pepper
Preparation:
1. Place kale and diced apple in a serving bowl.
2. Mix dressing ingredients together in a small bowl.
3. Pour dressing over salad and toss well.
4. Top with Parmesan cheese.
