My sister often seasons her chicken with dried rosemary then cooks it in a pan for dinner at school. I took that up a notch and used fresh rosemary and grilled the chicken. This is a super easy marinade that really brings out some great flavor in the chicken. This marinated chicken goes extremely well with a kale salad I've been making for years - Kale and Apple Salad with Dijon Mustard Vinaigrette.
Ingredients:
6 chicken breasts
1/4 cup lemon juice (about 2 lemons)
1/4 cup olive oil
1 tablespoon Dijon mustard
1 tablespoon fresh rosemary, chopped
3 cloves garlic, minced
salt and pepper
1 lemon, sliced in half
Preparation:
1. Mix lemon juice, olive oil, mustard, rosemary, garlic, salt and pepper together in a bowl. Place chicken in a zip lock bag and pour marinade over chicken. Marinate for an hour.
2. Grill chicken, about 8 minutes a side. Squeeze fresh lemon over chicken. Serve warm.
