This is the family favorite dinner. My dad always makes it every time the whole family is home. In the summer we grill this, but it is traditionally baked. In college, I ordered a small broiler pan on Amazon just to make this. My parents found this recipe in a Better Homes and Garden magazine ages ago. The copy of the recipe is so hard to read because it's faded from some much use. This dinner is a crowd pleaser for sure.
Ingredients:
3 pound beef tenderloin
3/4 cup unsweetened pineapple juice
1/2 cup A1 steak sauce
1/2 cup port wine
1/4 cup lemon juice
1 teaspoon seasoned salt
1 teaspoon lemon-pepper seasoning
1 teaspoon dry mustard
1 teaspoon pepper
salt and pepper
3-4 slices bacon, cooked
1 cup mango chutney
Preparation:
1. Make marinade by mixing together pineapple juice, steak sauce, wine, lemon juice, seasoned salt, lemon-pepper seasoning, dry mustard, and pepper.
2. Season meat with salt and pepper.
3. Please meat in a large Ziploc bag and pour marinade over meat. Let marinate for 6-9 hours, no longer. Discard marinade.
4. Roast uncovered at 425 degrees for 30-45 minutes until meat thermometer reaches 135 degrees.
5. Spoon chutney over roast. Place bacon strips on top of roast.
6. Return to oven for 5-10 minutes, until desired degree of doneness. Let sit for 5-10 minutes before slicing.
