This recipe uses a lot of ingredients I love on their own. Putting them together makes a light, healthy dinner. This is a recipe I found on Chef in Training. It's great for summers and weeknights with rice or quinoa.
Ingredients:
2 chicken breasts
Salt and pepper
2 tablespoons olive oil
Juice of 1 lime
1/4 cup honey
1 clove garlic, minced
1 avocado, diced
1 mango, diced
Preparation:
1. Heat olive oil in a large skillet. Add chicken. Cook 5-6 minutes per side.
2. Combine honey and lime juice. Pour over chicken for last few minutes of cooking.
3. Add mango and avocado for last minute or so. Remove from heat once avocado and mango have heated through.
