I love fresh mango salsa. It's a weakness of mine to buy it premade when I grocery shop while I'm hungry. I had this several times when I was on vacation in Mexico a few years ago, and it's been a favorite since then. It is great on Fish Tacos, as a dip with chips, or over grilled chicken.
Ingredients:
1 ripe mango - peeled, pitted, and diced
3/4 cup pineapple, diced
1 red pepper, diced
1/2 red onion, chopped
4 roma tomatoes, seeded and diced
2 tablespoons fresh cilantro, chopped
1 jalapeno pepper, seeded and minced
2 cloves garlic, minced
1 lime, juiced
Preparation:
1. Mix all ingredients in a bowl.
2. Best if served immediately. Store in an airtight container in the refrigerator to save.
