When we were in Vermont on vacation, maple syrup was involved in a lot of dishes. We went to Stowe, Vermont for lunch one day and I had maple buffalo wings. They were spicy, yet sweet and amazingly delicious. I knew I was going to have to make my own version at home. I prefer to have baked chicken, rather than fried wings. The sauce was really good with the carrots and celery served with the wings, so I added some carrots to the pan before baking to make some glazed carrots with the chicken.
Ingredients:
1 cup Frank's hot sauce
1 cup maple syrup
1 tablespoon brown sugar
1 tablespoon Cajun seasoning
2 chicken breasts
Note: To make cajun seasoning at home, mix 1/4 cup paprika, 1/4 cup salt, 3 tablespoons pepper, 1 tablespoon onion powder, 2 teaspoons cayenne pepper, 1 1/2 teaspoons oregano, and 1 1/2 teaspoons thyme. Use as needed in recipes. Most store-bought cajun seasonings are not gluten free, whereas making it at home is gluten free.
Preparation:
1. Combine hot sauce, syrup, brown sugar and cajun seasoning in a saucepan over medium heat. Stir until brown sugar is completely dissolved, about 5 minutes.
2. Place chicken in a covered dish with sauce. I like to add some carrots to the pan to bake with the chicken.
3. Bake at 375 degrees for 30 minutes.
