Scalloped potatoes are a family favorite. Tony got me a mandoline for my birthday, and he always looks forward to using it. This is a basic scalloped potato recipe that packs a big flavor punch. Make sure potatoes are covered for the first portion of the baking time to help them cook all the way through.
Ingredients:
3 large russet potatoes, cut into 1/8" slices
1 pint heavy cream
4 cloves garlic, minced
1 tablespoon fresh thyme
1 brick Sartori MontAmore, grated
1/2 brick, Parmesan, grated
Preparation:
1. Preheat oven to 400 degrees.
2. In a small sauce pan, heat heavy cream, garlic, and thyme. Sauce will start to thicken.
3. Mix 1 cup of MontAmore in with the sauce. Once cheese has melted, remove from heat.
4. Spray an 8x8 pan with pan spray. Place 2 layers of potatoes on the bottom of the ban. Layer sauce, then a mixture of Parmesan and MontAmore over the potatoes. Repeat layering. Top the top layer of potatoes with cheese.
5. Cover tightly with foil.
6. Bake potatoes, covered for an hour. Remove foil and bake for 30 minutes. Total baking time is 90 minutes.
7. Turn broiler on for about 5 minutes to crisp up the top layer of potatoes. Watch carefully so they do not burn.
8. Let potatoes rest for 10-15 minutes before serving.
