I make these burritos with leftovers from the Mustard Spinach Sausage dinner. I use leftover mashed potatoes from the same dinner. This is such an easy way to repurpose the leftovers. In the rare event that there are leftovers of this dinner, this burrito is an awesome way to start off the following day as breakfast!
GF* - To make gluten free, use corn tortillas.
Ingredients:
Leftovers from Mustard Spinach Sausage
1/4 cup leftover mashed potatoes
1 egg
1/8 cup shredded Sartori Parmesan cheese
1 tortilla
Preparation:
1. Heat skillet over medium. Scramble egg.
2. Add sausage and spinach mixture.
3. Stir in mashed potatoes.
4. Top with Parmesan cheese. Allow to melt.
5. Place egg mixture in tortilla and wrap. Allow to cool.
6. Wrap with plastic wrap. Refrigerate for use in 1-2 days, otherwise freeze for up to 2 months.
