This is a really quick and easy dinner that is really tasty! This is a great weeknight dinner that can be easily made without many special ingredients. I often find that I forget about this dinner and when I make it again I wonder why I don't make it more often.
Ingredients:
1 tablespoon olive oil
1 chicken breast, cubed
1 tin water chestnuts, diced
1/2 cup shredded carrots
2 eggs
rice noodles
1/3 bottle peanut sauce (Stonewall Kitchen is my favorite)
2 tablespoons cilantro, chopped
Preparation:
1. Heat olive oil in a medium skillet over medium heat.
2. Add chicken and cook until almost cooked through.
3. While chicken is cooking, boil water and cook rice noodles according to package directions.
4. Drain extra oil, then add eggs and scramble.
5. When egg starts to firm up, add water chestnuts and carrots.
6. Drain rice noodles and stir in with chicken. Add peanut sauce.
7. Top with chopped cilantro and serve.
