This is a fantastic summer pizza that pares a few of my absolute favorite ingredients - peaches, prosciutto, and goat cheese - on one of my favorite dishes - pizza!
Ingredients:
2 loaves Pizza Dough (half of my recipe)
2 tablespoons olive oil
2 pinches corn meal
8 slices prosciutto
2 medium peaches, unpeeled, cut into thin slices
4 oz soft goat cheese, crumbled
4 oz mozzarella, shredded
1/8 cup mint, roughly torn
1/2 cup balsamic vinegar
1/8 cup honey
Preparation:
1. Heat a large, deep skillet over medium heat. Reduce balsamic vinegar and honey until it is about 1/3 cup. Set aside to cool.
2. Preheat oven to 500 degrees. Preheat pizza stone.
3. Dust pizza stone with a large pinch of cornmeal. Roll out pizza dough to about a 1 cm thick.
4. Use a pastry brush to brush dough with a tablespoon of olive oil.
5. Place a layer of prosciutto (4 slices) on the dough.
6. Top with 2 oz of crumbled goat cheese and 2 oz of shredded mozzarella.
7. Top with peach slices.
8. Bake for 9-11 minutes, until crust is crispy and cheese is melted.
9. Remove from oven and drizzle with 2 tablespoons of balsamic honey reduction.
10. Top with torn mint. Cut and serve warm.
