I love peanut butter. Since I was little, a favorite snack of mine has been to get a spoon full of peanut butter and eat it with chocolate chips. I use this recipe to make the chocolate kiss cookies as well. I make these almost every year as part of my Christmas cookie baking.
Makes 4 dozen.
Ingredients:
2 sticks butter, softened
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 1/2 cups creamy peanut butter
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon vanilla
1/2 cup granulated sugar mixed with 2 teaspoons cinnamon
Preparation:
1. Mix butter, sugars, and peanut butter together until creamy.
2. Add eggs, vanilla, and baking soda and mix well.
3. Add flour, 1/2 cup at a time.
4. Roll each cookie in cinnamon sugar prior to placing on baking sheet or stone.
5. Bake at 350 degrees for 12 minutes.
6. If adding Hershey kisses: Move cookies to a cooling rack or foil, then place 1 kiss in the center of each cookie.
