Happy Halloween! With all the candy around this time of year, it's fun for me to repurpose some of it and make something creative and new. My manager at work challenged me to make something with peanut butter and Kit Kat bars. I was debating between brownies and scotcheroos. I love Scotcheroos the way I make them, so I went for brownies. I looked at tons of sample recipes, then modified a recipe I found on Livin The Pie Life. These brownies can be topped with any candy - Kit Kat, Twix, M&Ms, etc.
Ingredients:
1 box Ghirardelli Brownie Mix + water, egg, oil (per box directions)
Peanut Butter Layer:
1/4 cup (1/2 stick) unsalted butter, at room temperature
1 cup peanut butter
1 cup powdered sugar
3 tablespoons milk
1 teaspoon vanilla
Chocolate Frosting:
1/4 cup (1/2 stick) unsalted butter, at room temperature
1/4 cup cocoa powder, sifted
1/2 teaspoon vanilla
1 cup powdered sugar
2 tablespoons milk
Topping:
1 cup Kit Kat Bars, cut into pieces
Preparation:
1. Mix and prepare brownie batter per box instructions. Preheat oven per box instructions (usually 325 degrees).
2. Line an 8x8 pan with foil to make it easy to lift brownies out of pan after baking. Spray soil with pan spray. Pour batter into pan and bake according to package instructions.
3. Bake brownies and allow to cool completely.
4. To make peanut butter layer, cream together butter and peanut butter until smooth. Add powdered sugar, milk and vanilla. Mixture should be thick, but spreadable. (Adjust consistency as needed by adding powdered sugar or milk.)
5. Spread peanut butter mixture over cooled brownie. Put pan in the fridge while making frosting.
6. To make frosting, cream together all ingredients with a mixer. (Adjust consistency as needed by adding powdered sugar or milk.)
7. Spread frosting across peanut butter layer of brownies.
8. Top brownies with Kit Kat pieces. Gently press down on pieces so they stick to the frosting. Lift brownies out of pan and cut into bars. Serve immediately or store in an airtight container.
