My friend from work and I both love pecan pie. When we saw these cookies, it was a given that they needed to be made. These were simple to make. It helps to chill the dough for a short period of time to prevent the cookies from spreading on the cookie sheet. This helps keep the filling in place. These will absolutely become part of my annual Christmas cookie baking!
Makes 3 dozen.
Ingredients:
Cookie:
2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 cup brown sugar
1 1/2 sticks unsalted butter, softened
1 egg
1 teaspoon vanilla
Filling:
1/4 cup brown sugar
1/8 teaspoon salt
1/8 teaspoon cinnamon
3/4 teaspoon vanilla
1/8 cup cream
1/4 cup chopped pecans
Preparation:
1. Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.
2. To make cookie dough, sift flour baking powder, and 1 teaspoon salt together in a small bowl.
3. In a stand mixer, beat butter and 1 cup brown sugar together until light and fluffy.
4. Add egg and 1 teaspoon vanilla and beat until smooth.
5. Gradually add dry ingredients, mixing until smooth.
6. Chill dough while making filling, at least 30 minutes.
7. Whisk together 1/4 cup brown sugar, 1/8 teaspoon salt, 3/4 teaspoon vanilla and cream. Stir in pecans.
8. Make 3/4 inch balls of dough. Place on cookie sheet and make a round indentation with your thumb to make a well for filling.
9. Fill the well of each cookie with a scant teaspoon of filling.
10. Bake for 8-12 minutes, until cookies are lightly browned. Cool for 2-3 minutes on cookie sheet before removing to cooling rack.
