This is my go-to when I make homemade pizza. I love goat cheese. I couldn't tell you how I came up with this combination, but I'm so glad I did! Even when I order pizza, we get pepperoni and pineapple on it, then add goat cheese at home and stick the pizza in the oven for a few minutes to melt it. I make my own tomato sauce, which can be found on my Spaghetti recipe.
Makes 1 pizza
Ingredients:
1 pound loaf pizza dough
1 teaspoon cornmeal
1 1/2 tablespoons olive oil
1/4 cup tomato sauce
10 slices Usinger's pepperoni
1/4 cup pineapple, diced
3 ounces herbed goat cheese, crumbled
2 strips Usinger's bacon, cooked and crumbled
6 ounces pizza cheese (I usually use a blend of mozzarella, Sartori Extra Aged fontina and Sartori SarVecchio Parmesan)
Preparation:
1. Preheat oven to 500 degrees. Heat pizza stone in oven.
2. Roll dough as thinly as possible. Adding a little flour to coat the dough helps.
3. Take the hot stone out of the oven. Sprinkle the cornmeal over the stone. This prevents the dough from sticking to the stone.
4. Move dough to pizza stone. Brush olive oil over dough.
5. Spread sauce evenly over dough. Layer pepperoni over the sauce.
6. Sprinkle pizza cheese over pepperoni and sauce.
7. Scatter pineapple and goat cheese on top of pizza cheese. Add bacon.
8. Bake for 18-20 minutes at 500 degrees.
9. Remove stone from oven. Allow to cool for a few minutes prior to cutting.
