For our dog Zoe's 2nd birthday, I made her a cake with all of her favorite things - peanut butter, pumpkin, applesauce, and Greek yogurt. My sister had gotten me a silicone mold meant for making chocolate or decorations for cakes. I ended up using it to mix extra applesauce, pumpkin puree, peanut butter, and Greek yogurt together to create cute shapes to freeze and use as treats. Zoe loved this cake and I'll absolutely be making it again for her next birthday!
Ingredients:
1 cup flour
1/2 teaspoon baking soda
1/8 cup vegetable oil
1/4 cup creamy peanut butter (make sure it is low sugar and does not contain Xylitol, which is toxic to dogs!)
1/2 cup plain, unsweetened applesauce
1/2 cup pumpkin puree
1 egg
Frosting:
1/2 cup plain Greek yogurt
1/4 cup creamy peanut butter
Preparation:
1. Preheat the oven to 350 degrees. Grease an 11x7 rectangular pan or 8-inch round pan.
2. In a medium bowl, whisk together vegetable oil, peanut butter, applesauce, pumpkin puree, and egg.
3. Whisk in flour and baking soda.
4. Pour batter into greased pan. Bake for about 18-25 minutes, until a toothpick comes out clean. Let cool.
5. While cake is cooling, make the frosting. In a small bowl, mix together peanut butter and Greek yogurt, until the consistency is smooth and even.
6. Cut cooled cake into smaller rounds or squares. Frost a middle layer and top cake with additional frosting. Make sure to serve your dog an appropriate serving for their size and diet. Enjoy!
